If anyone could bake delicious apple cake, it was my grandma! One Sunday, as I was playing in Grandma’s garden, the scent of apple cake soon wafted out of the house. It was always ready around four o’clock, and I’d rush straight into the kitchen. But Grandma was strict—the cake had to cool down first. Sigh… my patience was often in short supply…
Years later, I bake the same cake. But not in the oven like Grandma did. No, actually much better (sorry, Grandma!). My apple cake is baked in a grill pan. The batter, the apples, the sultanas—everything goes straight into the pan. Since the pan has a flat bottom, it fits perfectly in my kettle grill. It’s no problem over an open fire either, but make sure it’s sitting on a grate.
